It's what I get for running my big mouth, really.
Recently, during a conversation with friends I?proposed a bet - a wild game only diet from October through January.
The thought of eating only wild game for an extended period of time was one that I had been kicking around for a while and I figured why not give it a shot.

Only one friend was game enough (or crazy, whichever you prefer) to take me up on the bet. The consequence - the loser washes the winner's truck.
Now, I enjoy preparing and eating the game that I harvest, so I figured it would be no big deal at first.
Then the more I thought about it, the more I realized just how much I depend on store-bought meats. I'll never profess to being a great hunter. What if I don't have a good hunting season? Will I have to become a vegetarian?

Matt's Iowa Cheese"Steak" Sandwich
Ingredients:
1 Canada goose breast
Olive oil
Salt
Pepper
Steak seasoning
Brown sugar
1 Small vidalia onion, sliced
Mixture of chopped bell peppers
1 can of beer
Pepperjack cheese
Cut goose breast into several large pieces about an inch thick. In small bowl, coat meat with oil, salt, pepper and steak seasoning.
Place in skillet over medium-high heat. Place onion slices over meat and sprinkle with brown sugar. Cook goose on both sides to medium-rare, remove and slice thinly. DO NOT OVERCOOK!
Add chopped peppers to skillet and pour in 1/4 can of your favorite beer. Simmer until beer evaporates then melt cheese over onions and peppers. Serve on roll with lettuce, tomato and mayonaise. Makes 2-3 sandwiches.
And what will I do for lunch? A drive-thru burger is out the window now.
My day one solution: The Iowa Cheese "Steak" Sandwich.
